What would the new year be without some hip new diet plan? Per Zach and my usual pattern, we went hog wild between November and December. My husband has had a long and difficult year with his weight, so when he and my sister both asked me independently to join them on Keto, it didn’t take much to sell me on the idea.
Keto is a stark break from what I usual chose, but I think I can make it work with my IBS management. Plus, if I can drop some holiday weight before my next trip, I’ll be elated.
There was some interest on my instagram about sharing my keto meal plans. I will be sharing my shopping list and meal plan on here, but you can follow my instagram account for daily-ish check ins and more frequent updates. There are several things I need to note.
- I work nights. My husband works days. I made this menu like I was a normal person, but realistically, my instagram is NOT going to match up with my menu. It’s just the reality of my work menu.
- I do my best with the grocery list, but since you don’t buy certain ingredients (spices, cheeses, etc) fresh each week, I might forget something. Double check before you are done with your grocery shopping.
- The menu is for 2 people.
- Most of the recipes are not my own and have not been tried before I put them on my menu. Obviously, I think they sound delicious but I could be wrong.
Alright, now on to the menu.

My breakfast casserole is 12 eggs, 0.5 cups cheese, 3 ounces chopped asparagus, half turkey sausage, and 5 slices of bacon. Bacon on half, sausage on half. Season with salt and pepper Bake 30 minutes at 350 degrees.
Chili. Nix the beans and half the size.
Cauliflower mac and cheese. I am making half a recipe.
Cheesy Mexican Chicken skillet.
Breakfast chocolate milkshake.
Use any recipe you want for Keto cobb salad and greek salad. I am just using the combo of ingredients above.
