Every other week, Z. and I have my in-laws over for dinner. We have a family weight loss competition going on, so it has to be healthy and relatively low calorie. But I am also so incredibly swamped right now that I don’t have a ton of time. So quick, healthy, and lovely. Easy, right?
Actually, it is not as hard as you think.
Start with a first course. Makes dinner at home feel like a party, rather than every night event. Since it is spring, I threw together a truly green salad. It was romaine lettuce, zucchini, green onions, and spring peas with a cucumber dressing. It was refreshing and bright. Plus, I am in love with the monochrome look.
My go to is always a roast chicken for these dinners. It is low calorie and beautiful in it’s simplicity. My go-to roast chicken recipe is here.
Then, throw in a vegetable side. I made Parmesan garlic green beans (recipe coming soon!).
I am a firm believer that if you make something beautiful, it makes it feel like it has more calories than it does. These potato roses came together quickly and were only 110 calories a piece. But don’t they look like they have more?!?
When it was all done, we had a spring green salad starter, roast chicken with parmesan green beans and potato roses, all for under 500 calories! The only thing that was calorie dense were the garlic knots which were the mandatory fresh bread recipe. And the whole thing came together in an hour, from start to finish.
