Last week was rough because my head was pretty far from being in the game, but this week was significantly better… which was honestly kind of odd since I was in finals and crazy stressed.

I realized that last week I forgot to post Sunday, so let’s start with that. The morning was avocado toast on my fresh loaf of bread and bacon… nom… I cannot begin to describe what amazing avocado toast this was.

In other news, I am pretty much committed to making bread for life now.

For lunch, this handsome man made me easy pepper steak and cauliflower fried rice. Such a hottie, right?



Then for dinner, we went to my inlaws for beef vegetable soup and grilled cheese.

Now, for the rest of the week.

Breakfast, you know the drill…

Lunches, this week I made myself a chickpea cauliflower curry with rice. It might not look like much, but it was delicious and super filling. The exception was  Wednesday, after my final, when I went for fajitas with my amazing classmates.



Monday, I found an amazing new food blog and tried out this recipe for slow cooker Jamaican chicken curry with a side of rice. It was pretty high in calorie, but Z. and I both devoured it. Plus, slow cooker is always a bonus.


Tuesday was one of those dinners that you don’t like but your spouse loves. Hate when that happens. I made this maple-crusted salmon dish with Italian spiced quinoa and green beans. Dessert was 1/2 cup of blueberries.


Wednesday dinner was this Skinnytaste recipe for shrimp zoodle scampi with a Caesar salad. It was delicious and just felt celebratory.


Thursday, our small group had chicken stuffing casserole. Friday, we had an inaugural party where we ate pizza, fresh breadsticks, greek salad and watched post apocalyptic movies and drank far, far too much wine. Saturday we had dinner at my inaws with steak, salad, and baked potatoes.

My weight went from 173.0 to 172.6… but this was probably also a factor…


Always love when being a female plays a role in weight loss.
