Roast tomato Pasta Sauce – from Scratch!

Tomatoes, tomatoes, as far as the eye can see. Our CSA has been giving us a ton of tomatoes and since I am not a fan, this left Z. to eat all of them. Needless to say, that wasn’t happening!

I needed to come up with a way to use a large number of tomatoes very quickly, including cherry tomatoes. Pasta sauce was my answer. Except for one small problem – I had never made sauce from actual tomatoes. Canned or sauce, yes. But not physical tomatoes.

Guys, it was amazing! Z and I, well, I don’t know if we will ever be able to eat regular Bolognese sauce again. Don’t you secretly love and hate when that happens? It’s awesome because you discovered some wonderful new food, but now you have one less thing you can be justifiably lazy about. I really love being lazy.

I spent a few hours looking at various recipes like this one, this one, and this. Finally I settled on something that I just felt would work and was well, less work. I didn’t want 2 tons of pasta sauce, I just wanted to not feel guilty about having produce going bad in my house.

First have way too many tomatoes lying around. Get a cake pan and put a little olive oil in the bottom while preheating the oven to 450 F.

All the tomatoes go into said pan. Seriously – I cut the large ones in half and just threw in a bunch small cherry tomatoes. I also added one head of garlic, skin removed but cloves left whole, and some random sweet peppers we had lying around.

This went in to the oven for 45 minutes. When it comes out the skin should be bubbling up and slightly charred.

I waited 30 minutes or so and then removed the skin from the tomatoes. The tomatoes and everything else then went in to a bowl and was pureed. I would recommend that if you want a less liquidy, less olive oil taste in your pasta sauce, do not put the remaining juices from the pan in your pasta sauce. I don’t mind olive oil flavor, so everything went in. I then added in half a cup of fresh basil from the garden.

That the base for your pasta sauce. Proceed and make it however you normally do. Me? I add in onions, ground turkey, onion powder, garlic powder, and chili paste to finish it off.

This tasted so fresh. That was the only word Z. and I could come up with to describe it. It tasted like summer and fresh and amazing.

I’ve made two batches since this one and Z. has been requesting more.
