
The beet may be up there with Brussel sprouts for least loved veggie. I am a firm believer that there is way to prepare every veggie to be delicious. The key and hard part is finding that preparation method.
Beets are one of those veggies that was a mystery to me. All I had were these terrible memories of roasted beets at the holidays. They were overly sweet and had all this red, sticky fluid. So, when we got a huge batch in my CSA box, I knew I need a new way to use this vegetable.
So my solution? Channel the queen of white, 20 somethings everywhere and “shake, shake, shake, shake, shake.”
Seriously, I started putting raw beets in my morning shake and while the color got really weird, the taste was sweet and cold, perfect for hot summer mornings. It’s like a healthy milkshake, but not chocolate and with lots of fiber and very few calories. So, really, nothing like a milkshake at all. But good.

- 1/2 cup mixed strawberries
- 2 tablespoons oat
- ⅓ cup raw diced beet
- 1/2 cup almond milk
- 1 teaspoon agave syrup
